Classic Italian Summer Salad

We are in Italy this month and the one thing I cannot have enough of is this delicious summer salad. The key is fresh ingredients and to 'keep it simple' - as with most any Italian recipe. Loosely chop a small bowl of ripe red tomatoes, thinly slice some red onion, shred some aromatic fresh basil, add a finely chopped hot chili [if that’s your thing], drizzle with a good quality extra virgin olive oil, balsamic vinegar, and salt and pepper to taste. That’s it! A loaf of fresh yummy Italian bread to soak up the juice and you'll savor every bite.
