Mexican Lasagna

Ingredients:

2 lb of ground beef or ground turkey meat

3 packages of taco seasoning (follow package instructions)

1 24 ounce jar thick and chucky salsa

1 pkg. tostado shells

1-2 cups shredded Mexican or yellow cheese

24 ounce small curd cottage cheese

1 cup parmesan cheese (divided into 2 half cups

Preheat oven to 350 F degrees

Brown meat in a large skillet and drain oil, add taco seasoning and salsa.

Simmer for 20 minutes.

In a medium bowl, mix cottage cheese, 1/2 package of taco seasoning and 1/2 cup of parmesan cheese.

Lay enough tostada shells to cover bottom and sides of baking dish.

Layer a portion of cottage cheese mixture cover shells, and

add enough meat sauce to cover the cottage cheese.

Sprinkle 1/4 cup of parmesan on meat sauce

Add enough shredded cheese to cover the meat sauce.

Repeat these steps for the second layer. Take 1/2 shell and crumble over top.

Bake for 25-30 minutes at 350 F degrees.

Both recipes serve 6-8 people
