Chicken and Broccoli Stir Fry

Prep time: 30 min.

Ingredients

½ cup water

2 tablespoons soy sauce

2 tablespoons bottled hoisin sauce

2 teaspoons cornstarch

1 teaspoon ginger

1 teaspoon toasted sesame oil

1 pound of broccoli (or florets)

1 yellow and red sweet pepper

2 tablespoons cooking oil

1 pound (2 to 3) boneless, skinless chicken breast,

Cut into bite size pieces (can season with Ms. Dash no sodium seasonings)

2 cups chow mien noodles or hot cooked brown rice

1.For sauce, in a small bowl stir together water, soy sauce, hoisin sauce, cornstarch, ginger, and sesame oil, set aside.

2.Cut florets from broccoli stems and cut into small pieces. Cut sweet peppers into bite size strips.

3.Pour 1 tablespoon of the cooking oil into a wok or large skillet. Heat over medium high heat. Add broccoli and sweet peppers; cook and stir for 3 to 4 minutes or until crispy tender. Remove vegetables from skillet or wok.

4.Add remaining oil to skillet. Add chicken, cook and stir for 3 to 4 mins or until chicken is no longer pink. Push chicken from center of skillet or wok. Stir sauce, add to center of skillet. Cook and stir until thickened and bubbly. Return vegetables to skillet. Cook and stir about a minute more until heated through.

Serve over Chow mein noodles or brown rice.
