Recipes Meatballs In Pineapple Sauce

1 tablespoon cooking oil 1 / 3 cup finely chopped onion 2 tsp . finely grated peeled ginger root * 1 - 14 oz . can crushed pineapple , drained and juice reserved
1 / 2 cup chili sauce 3 tablespoons lime juice
INGREDIENTS 2 tsp . soya sauce 1 / 4 tsp . salt 2 / 3 cup reserved pineapple juice 2 tsp . cornstarch 1 / 4 grated lime zest Your choice homemade meatballs ( or can use premade from store )
DIRECTIONS
Heat cooking oil in medium saucepan on medium heat . Add onion . Cook for about 2 minutes , stirring often , until starting to soften . Add ginger .
Heat and stir for another 2 to 3 minutes , until onion is fully softened . Add next 6 ingredients . Stir and bring to a boil .
Stir reserved pineapple juice and cornstarch in small bowl until smooth . Slowly add to crushed pineapple mixture , stirring constantly .
Heat and stire for 2 to 3 minutes until boiling and slightly thickened . Add lime zest . Stir and then remove from heat .
Put meatballs of choice into an ungreased 2 quart ( 2L ) casserole . Pour pineapple mixture over top . Stire until coated .
Bake , uncovered , in a 325 F oven for about 30 minutes until meatballs are heated through . Serves 6 .
Note : if you have leftover sauce , it is good heated and poured over baked chicken , pork chops or even sausage .
* Fresh ginger may not be at the top of your pantry list , so what do you do when your dream dinner recipe calls for ginger ? For 1 tsp . fresh or ground ginger , substitute 1 tsp . ground allspice , ground cinnamon , ground mace or ground nutmeg .
