Mama Mia! Authentic Italian
Pasta With Parsley Pesto Sauce
1 pkg (12 oz.) linguine, spaghetti, or pasta of your choice
1 cup fresh parsley sprigs
¼ cup pine nuts, toasted (optional)
2 medium cloves of garlic
1 T. dried basil, or 1 cup packed fresh basil leaves
½ cup olive oil, or other oil of choice
¼ cup water
½ cup freshly grated parmesan cheese
½ tsp salt
pepper to taste
Cook pasta according to package directions. While pasta is cooking, combine parsley, nuts, garlic,
basil, oil, and water in blender or food processor. Process until smooth. Gradually add cheese until
well mixed. Season with salt and pepper. Drain pasta. Toss warm pasta with pesto sauce. Serve
immediately.
Great served with fresh salad and french bread.
Makes 6 to 8 servings.
