Beef Curry

DO IT
BUY or GROW IT
1. in a small bowl mix turmeric, cumin, coriander and salt, moisten with water.
Mix well and set aside
3 teaspoons turmeric
2. heat oil with chillies and bay leaves in a large saucepan
1½ teaspoons cumin
3. add onions, fry on medium heat until lightly browned. Add garlic and ginger
and sauté until soft
2 tablespoons coriander
salt (to taste)
4. pour spice mixture over onion mixture, stir and simmer for a few minutes
½ cup vegetable oil
5. add meat and cook until brown, stirring constantly
2 chillies, finely sliced
6. add one cup of water to cover the meat. Bring to the boil, lower heat, then
cover and simmer for about 45 minutes
4 bay leaves
2 onions, finely diced
5 cloves garlic, crushed
7. add cardamom pods
5 centimetre piece of ginger, grated
8. cook for further 10 minutes and serve with rice
1 kilogram blade steak, diced
3 cardamom pods
VARIATION
Add 4-5 large potatoes after sautéing the onions, garlic and ginger
