Recipes for Romance from Reader’s Rock Magazine Janet's favorite recipe from “Two By Two” Chilled Avocado – Buttermilk Soup. 2 ripe avocados, peeled and pits removed ¾ cup fat-free buttermilk ½ c chopped fresh tomatillos ½ c vegetable broth 1 Serrano pepper, seeded 1 small clove garlic 3/8 tsp salt Janet Beasley #1 Best Selling Author of the Hidden Earth Series, Janet Beasley, has expanded her creativity to bring about more than just the stories. . .she has made her fantasy world even more real by creating a fairy tale cookbook stemming from the world of Maycly. 2 T minced red bell pepper 1 T chopped fresh chives 1 tsp fresh lemon juice ½ tsp orange zest 1. 2. Place first 7 ingredients in blender and process until smooth. Combine remaining 4 ingredients in a small bowl and toss gently. Sprinkle over top of each cup of soup. Chill 4 martini glasses in the freezer or fill with ice water and let sit until frosty, about 5 minutes (pour out water). Add the vermouth, dividing evenly; swirl to coat the glasses, then pour out. Add gin to a cocktail shaker filled with ice. Shake vigorously until chilled; divide among chilled glasses. Garnish each with a skewered pickled baby beet, and serve immediately.
