Janet's favorite recipe from “Two By Two”
Chilled Avocado – Buttermilk Soup.
2 ripe avocados, peeled and pits removed
¾ cup fat-free buttermilk
½ c chopped fresh tomatillos
½ c vegetable broth
1 Serrano pepper, seeded
1 small clove garlic
3/8 tsp salt

2 T minced red bell pepper
1 T chopped fresh chives
1 tsp fresh lemon juice
½ tsp orange zest

Place first 7 ingredients in blender and process until smooth.
Combine remaining 4 ingredients in a small bowl and toss gently.
Sprinkle over top of each cup of soup.
HINT: Make sure the serving cups and spoons are chilled. (On Maycly the
soup is served in chiller leaf cups).

Heart to Heart Loving Martini
2 ounces dry vermouth
8 ounces premium gin
Ice cubes

cocktail skewer

Chill 4 martini glasses in the freezer
or fill with ice water and let sit until
frosty, about 5 minutes (pour out
water). Add the vermouth, dividing
evenly; swirl to coat the glasses, then
pour out. Add gin to a cocktail
shaker filled with ice. Shake
vigorously until chilled; divide
among chilled glasses. Garnish each with a skewered pickled
baby beet, and serve immediately.
