Rainbow Cake
Summer is coming and there is nothing nicer than a bright,
vibrant cake to celebrate and match your mood. Buttercream
is a great medium to work with because you don’t have to be
adept at it to get a really impressive cake. The watercolour effect
on cakes is also very on trend this season though we have
gone a little brighter in this two tier cake with rainbow colours.
Whatever you are planning on celebrating, be it Pride or a
birthday, this cake will make a great centre piece.
The cakes are vanilla sponge, layered with vanilla buttercream and strawberry jam,
though you can change the flavour if you like. Add some confetti sprinkles into the
cake batter or colour it up to create a fun effect when you cut into it. If you want a paler,
pastel effect just add less colour to the buttercream.
