Pink Ombre Vanilla Cake Ingredients for the cake 450g caster sugar 450g unsalted butter or margarine 9 eggs, lightly beaten 450g self-raising flour 1 tbsp vanilla essence Strawberry jam Ingredients for the buttercream 250 unsalted butter 250g vegetable fat (Trex) 1kg icing sugar sifted 1 tbsp vanilla essence Pink gel food colouring Decorating the outside of a cake to make it look mouth- wateringly inviting has long been the goal of most cake makers. But recently I have turned my attention to the inside of the cake. Who says a sponge has to be plain? Why not colour it up? In recent months I have been asked to make all sorts – from rainbow cakes and cakes with confetti sprinkles to polka dots and even leopard print. Leopard print is quite tricky but achieving an interesting effect inside your cake to impress your guests is quite straightforward. This pink ombre vanilla cake is a great way to introduce colour on the inside. You can change the colour to blue, orange, green or even purple if you prefer. It’s perfect for a birthday cake, a gender reveal cake or even just for an afternoon tea.
