Morning Glory Muffins Ingredients: 1 cup whole wheat flour 1 cup all-purpose flour ¾ cup date sugar ½ cup coconut flakes ½ cup walnuts ½ cup raisins 1 tbsp baking powder 2 tsp baking soda 2 tsp cinnamon, ground ½ tsp ginger ground ½ tsp nutmeg, ground ½ tsp salt 2 cups carrot, grated ¾ cup applesauce, unsweetened 1 medium-sized apple, finely diced ½ cup coconut oil, melted 1 tbsp vanilla extract These sweet treats are chock-full of fruits and veggies and pack a punch with healthy fats, B vitamins, and omega-3 from the walnuts. They’re wonderful as a snack or even as an on-the-go breakfast! If your child has a nut allergy or their school has a “no nuts” policy, try substituting sunflower or pumpkin seeds for the walnuts! Method: 1. Prepare a muffin tin with paper liners and set aside. Preheat the oven to 400 degrees. 2. In a large mixing bowl, combine all of the dry ingredients: the two flours, sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Stir until well-incorporated. 3. Add in the applesauce, coconut oil, diced ap- ple, and vanilla. Stir to combine, do not overstir! Next, carefully fold in the carrot, raisins, coconut and walnuts. Stir to combine. 4. Divide evenly in the muffin tin and bake at 400 degrees for 10 minutes, then reduce the heat to 350 degrees and bake for 10-15 more or until a toothpick inserted into the center comes out clean.
