READERS Share Your Family Favorites With Us! #RAISEVEGAN READER RECIPE Vegan Tacos You Will Need: Corn Tortillas, Cauliflower, Black Beans, Refried Pinto Beans, Corn, Onions, Salsa, Vegan Cheese, Plain Vegan Almond Milk Yogurt, Guacamole, Quinoa, & Cilantro. Method: Roast the cauliflower in the oven for 45 minutes at 400 degrees. We season ours with apple cider vinegar, onion powder, cumin, paprika, chili powder, pink salt & pepper. In a pan saute your onions, add in black be- ans, cooked quinoa, and refried pinto beans and corn. Season with garlic powder, cumin, chili powder, paprika, pink salt & pepper. Use this for your taco base. Toast your corn tortillas, and once cauliflo- wer is roasted and slightly crispy at the tops begin to load up your tacos! We layer the bean mix, cauliflower (chopped up), guaca- mole, salsa, and vegan cheese inside our tor- tillas and then add the plain yogurt drizzle. 58 Raise Vegan AUGUST 2018
