Chef Mychal Harris I'm Chef Mychal Harris, I consider myself to be apart to new chef movement of modern chefs. I try to stray away from the traditional and look for trendy food and plate design. Im locally born and raised, I studied culinary both here and abroad. My culinary career started me as cook working at the Five Star Graycliff which is the oldest known restaurant in the Bahamas. After developing my skills there I moved on to open the Cove Atlantis where I worked as a lead cook in Iron Chef Bobby Flay’s Mesa Grill. During my time there I absorbed everything south- western cuisine could possibly offer me I was even given the chance work in Chef Flay’s Mesa NYC. I then ventured on to doing the independent restaurant scene at the former Bob Marley Resort as a chef de partie. I was then offered a sous chef position at the Atlas Grill in the Atlantis Casino. During my stint I was tasked with successfully re-vamping an aging menu. I was able to transform the menu from an old pub to a high volume grill. During my time at the Atlantis I served as chef tournant or swing chef. My job was to fill in as the chef where ever I was needed. So I was given the opportunity work in many outlets and experience many cuisines. I then got promoted to the Head Chef spot in Chef Todd English’s Olives. I was sent to work in his restaurants in New York for training. I returned and opened the Olives Atlantis. I spent quite some time there until being transferred to Chef Jean George’s Dune at the Ocean Club. I spent almost two years at Dune as the head chef. Most recently a great opportunity was offered to me. I was offered the position of Executive Sous Chef in the highest grossing restaurant in the Atlantis. I have reached another milestone by becoming the youngest Executive Sous Chef in Atlantis. Im presently serving as the youngest executive level chef under the age of 30 in one of the world’s leading Keshala Knowles At the age of 15, Keshala Knowles made a decision that her career choice was Human Resources Management. She attended the College of Bahamas majoring in Business Administration and completed her Bachelor's degree in Organizational and Human Resources Management at The University of Western Ontario in London, Ontario, Canada.She has worked in Human Resources in Aviation, Hospitality and Banking; holding positions as Assistant Director of Recruitment, Compensation and Benefits Manager, Labour Relations Manager and currently the Recruitment Manager at Commonwealth Bank. Mrs. Knowles holds the Professional in Human Resources (PHR) and SHRM-Certified Professional certifications. She is a member of the College of the Bahamas Job Placement Advisory Committee, Society of Human Resources Manager (SHRM), Bahamas Human Resources Association and a member of Toastmasters Club 4209559. Nolan J. Knowles Nolan J. Knowles is a Bahamian accountant who has actively grown in that field since 2004. He developed an early interest in the accounting field which allowed him to focus on the different facets of this field whilst simultaneously attaining his accounting degree. Several strategically chosen career moves allowed him to make his mark while developing and teaching others from the wisdom earned from numerous mentors. Nolan was an Accounting Manager by the age of 24 and as a result of his relentless perseverance, positive attitude and attention to details, today he is the Financial Controller at the second largest employer in the Bahamas. He believes that in every adversity there is a seed of equal or greater benefit, but the results you get, depends on your reaction to the problem. Page 16
