Summer Favorites CORN AND AVOCADO SALAD 3 cups fresh corn ¼ cup lime juice 1 cup grape tomatoes, quartered 1 tablespoon sugar 1 ripe avocado, diced ¼ teaspoon salt ½ small red onion, diced pepper to taste 2 tablespoons cilantro, chopped plus more for garnish Combine first five ingredients. Whisk olive oil and remaining ingredients in small bowl until blended. Pour vinaigrette over corn mixture.
