RICOTTA AND GOAT CHEESE
WITH LEMON AND HERBS
2 tablespoons olive oil
4 ounces goat cheese
ΒΌ cup whole ricotta cheese
1 tablespoon chopped basil or thyme
2 teaspoons lemon zest
Salt and pepper
Stir goat cheese, ricotta, basil or thyme,
zest and olive oil in bowl. Season with
salt and pepper. Place in serving dish,
drizzle with olive oil, top with herbs
and serve.
MOZZARELLA, PESTO AND
ARUGULA CROSTINI
Mozzarella
Homemade or store bought pesto
Arugula
Shaved Parmesan
Pepper
French loaf, sliced and toasted
Place mozzarella slices on toast, drizzle
with pesto. Top with arugula and parmesan cheese. Serve.
