FOOD + ENTERTAINING HOMEMADE PIMENTO CHEESE TOAST 2 cups shredded sharp cheddar cheese ½ cup Duke’s Mayonnaise (you can add more for a creamier texture) 2 tablespoons diced pimento peppers ¼ teaspoon paprika 1 tablespoon grated onion 3 dashes of Texas Pete hot sauce, or more to taste Salt and pepper, to taste Sliced French bread Preheat oven to 350°. In a large bowl or food processor (for a smooth texture) combine shredded cheese and mayonnaise until well blended and creamy. Add spices and mix well. Mix in hot sauce, salt and pepper to taste. Spread on sliced French bread. Bake for 3 to 4 minutes then broil for 2 minutes. Watch closely as they can burn easily. Garnish with Italian parsley or any herb on hand. HOLIDAY 2014 57
