From Let’s Go Glamping in the Fall 2016 issue
MARINATED RICE
1 box Uncle Ben’s Wild Rice, cooked
1 cup frozen English peas, defrosted
½ cup chopped red pepper
Sliced green onions, to taste
Dressing:
¼ to ½ cup oil
1 teaspoon soy sauce
3 tablespoons cider vinegar
Pinch salt and pepper
1 tablespoon curry
While rice is cooking, mix dressing
ingredients in a jar and shake vigor-
ously. Pour dressing over warm rice
in large bowl. Add peas, red pepper
and green onion. Season with salt
and pepper. Mix. Can be served room
temperature or cold.
