TUSCAN GARDEN SALAD
This garden salad recipe is quick and easy for the whole
family to enjoy. It has been said “the secret to any salad
is the dressing” with this simple green garden saladʼs
dressing your family will not be disappointed.
Directions for Dressing:
In a jar or bottle with tight-fitting lid, combine all the
dressing ingredients; shake well . Chill. Just before
serving, combine greens, onion, cucumber and tomatoes
in a large salad bowl. Pour desired amount of dressing
over salad; toss to mix. Top with the red pepper rings.
Recipe Yield: 8-10 servings (1-1/3 cups dressing).
INGREDIENTS FOR DRESSING:
3/4 cup olive oil
1/2 cup red wine vinegar
2 tablespoons lemon juice, optional
2 teaspoons grated Parmesan cheese
1 teaspoon dried oregano
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper
INGREDIENTS FOR SALAD:
8 to 10 cups torn salad greens
1 red onion, sliced into rings
1 cucumber, peeled and sliced
2 to 3 tomatoes, cut into wedges
1 red pepper, sliced into rings

Deviled eggs are a staple at some family gatherings if your
family is like mine, and love deviled eggs, try this simple
recipe this Easter for your family or office gathering.
DIRECTIONS:
Scoop egg yolks into a medium sized bowl and set the
white halved portion aside. Mash the yolks, mix in
mayonnaise or whipped dressing, vinegar, fresh dill,
Dijon mustard, garlic powder, salt. Once mixed spoon
yolk mixture into the halved whites. Garnish with dill
sprigs if desired. Refrigerate until ready to serve.

1 teaspoon rice wine vinegar
