Investing with caution and avoiding major debt, the Menchacas chose to build their establishment when resources and time permitted. While the couple are still adding finishing touches, the restaurant officially opened mid-June. The Saturday the kitchen lights came on, traffic was strong, Lori said, with mostly friends and family stopping by after hearing about it on Facebook. But since then, word has spread like fire about the spicy kitchen. “Every week [since opening] there has been an increase,” Lori said. “Sixty percent have been new customers – new faces,” Ozzy added. “People are so supportive – so encouraging,” Lori said. “This was the first time anything like this has happened to me, but I was at Dollar General one day and I was buying stacks of salsa jars and a girl [asked me], ‘Are you making jelly?’ I said, ‘No, actually I am making salsa.’” A near celebrity moment for Lori, the woman asked if she was the “salsa lady” from Peaster. First responding with laughter, Lori claimed the title. Of her husband’s dream, Lori said she has always supported it but wanted something a little different than the “norm,” to avoid the hardships of a traditional eating establishment. “I didn’t want to do a restaurant per se, just based on all the people I have talked to over the years who have lived that life,” Lori said. “So, for me, I felt like the perfect way for Ozzy to achieve his dream and to not be saddled down with the restaurant business would be to just have a taqueria.” With outdoor seating and a togo window, along with the use of disposable plates and silverware, the Menchacas spend less time washing dishes and scrubbing floors and have more time to spend with their customers, Ozzy said – another part of Ozzy’s dream. “It’s always been a dream of mine to open a restaurant or to serve people food, because that’s our gift –
