our taste: RECIPE Pumpkin Pie Ingredients: 1 15 oz can pumpkin 1/2 cup mascarpone cheese 1/2 cup packed brown sugar 1/4 cup granulated sugar 1 teaspoon pumpkin pie spice 4 eggs, lightly beaten 3 ounces brewed coffee 1 9 inch Baked Piecrust Whipped Cream (optional) OCTOBER 2016 PA R K E R C O U N T Y T O D AY Instructions: 1. Preheat over to 375° F. 2. In large bowl, whisk together the pumpkin, mascarpone, brown sugar, granulated sugar, and 1 teaspoon pumpkin pie spice. 3. Stir eggs and coffee into pumpkin mixture until combined. 4. Pour pumpkin mixture into baked pastry shell. 5. Cover edged of crust with foil to prevent overbrowning. 6. Bake for 45 to 50 minutes or until edges are 98 puffed and center appears set. 7. Cool completely on a wire rack. Chill within 2 hours. 8. Serve with whipped cream.
