PCT : What ’ s your official title ? PN : Paula Nadziejka : Mom
PCT : What do you do ? PN : I am a stay at home mom to my daughter , Linden . I was previously a cook at the Lake Austin Spa Resort , but nowadays I ’ m a personal chef to my toddler .
PCT : What is your favorite book ? PN : Jitterbug Perfume by Tom Robbins
PCT : What kind of music are you into ? PN : Whatever sounds fresh . I try to avoid being in a musical rut . If I know the words well enough to sing along , it ’ s time to move on .
PCT : What ’ s the most daring thing you ’ ve ever done ? PN : I moved to Argentina by myself
and found a place to live and a job when I got there .
PCT : What accomplishment are you most proud of ? PN : I made a permanent change to my health and fitness by losing 50 pounds 12 years ago . I ’ m in a small minority of people who kept if off and made a lasting lifestyle change . I think it ’ s important to acknowledge it and share my story with anyone who needs to know it can be done .
PCT : When you were a child , what did you want to be when you grew up ? PN : Older ! And it ’ s still true . I ’ m looking forward to my next milestone birthday . I ’ m happier with each year that passes .
PCT : How did you get into your field ? PN : I went to culinary school to learn to cook for myself and my family . I enjoyed my externship so much , I stayed on to work long after I finished school .
