Recipe: Banana Nut Muffins

Preheat the oven to 350 degrees. Use olive oil to coat the muffin pan. Mix
all the dry ingredients-- except the chocolate. Blend the eggs and bananas
in your high speed blender and divide in half. Pour the white dough into the
muffin pan. Mix the chocolate into the rest of the dough. Then, pour the
chocolate dough into the middle. Bake for 30 minutes or until a tooth pick
comes out clean. Let it rest for five minutes. Then remove muffins. These
are just delicious. They make a great breakfast or post-workout snack. (This
makes 8 muffins.)
Recipe: Strawberry Ice Cream

Recipe: Fried Plantains

Three soft, very ripe plantains
Coconut butter
Salt
Slice the plantains lengthwise.
Sprinkle with a little salt. Place
in hot coconut butter on high for
2-3 minutes per side, until light
brown. This is a great breakfast, post-workout snack, or French fry
replacement.
2 ¼ cups almond meal (or
replace with some coconut flour)
½ tsp baking soda
2 whole eggs
½ tsp cinnamon
3 very ripe bananas or plantains
(plenty of sweetness here)
2 tsp raw organic cocoa powder
½ cup chopped walnuts
2 Tbsp honey (optional if you are
watching your sugar levels)

4 ripe bananas—sliced into
disks;freeze them on parchment paper
8 organic strawberries-sliced and
frozen
½ cup of unsweetened almond milk,
hemp milk, or coconut milk
½ tsp of pure organic strawberry flavor
(Frontier)
½ tsp of Red Beet Powder (for coloroptional)
2 Tbsp organic maple syrup (optional)
Blend it all in a food processor, scrape
down the sides and repeat as needed until
smooth. As the bananas thaw, they will acquire a smooth ice cream texture.
Serve immediately or place in popsicle holders and freeze.
Recipe: Beatrice’s Pizza

1 cup of sliced white mushrooms
1 organic sliced onion
Paleo Pizza Crust –Gluten Free (amazon.com)
½ cup organic tomato sauce
1 pound grass fed hamburger meat (10% fat)
½ cup Heidi Ho Creamy Chia Cheeze (amazon.com or health food store)
Vegan Gourmet Shreds Mozzarella--Follow Your Heart Brand (health food store)
Italian spices (or oregano)
Sauté onion with mushrooms for 10-15 minutes. Season with salt and Italian spice.In a skillet, brown the hamburger meatseason with salt and Italian spices as well. Brown the pizza crust in the oven. After the pizza crust is brown,
combine all the meat, tomato sauce, onions and mushrooms and spread over the browned pizza crust. Cover with both the
“cheeses”. Set the oven to broil and melt the ingredients. Enjoy! Preparation time is 30 minutes.
