Preheat the oven to 325ºF. Line a baking sheet
with parchment paper.
In a large bowl, whisk together the egg whites,
honey and vanilla bean seeds. Whisk vigorously
until most of the seed clumps are broken up. Stir
in the shredded coconut and combine thoroughly.

Pack a 1-tablespoon measuring spoon with batter.
Release it onto the parchment-lined baking sheet.
(If it crumbles out of shape, form the batter into a
tightly packed ball with your hands.) Repeat with
the remaining batter.
Bake for 12-15 minutes until golden brown.
Cool completely. Store in an airtight container.
(Macaroons are best enjoyed within 1 day.)

Banana Bread Pancakes

Makes about 20 pancakes
4 medium bananas
8 large eggs
1/4 cup ground flaxseed
1 TBSP ground cinnamon
Coconut oil, for cooking

Chopped walnuts, optional
(for sprinkling onto the pancakes)
In a blender or food processor, combine the
bananas, eggs, flaxseed, and cinnamon. Blend
until smooth.
In a large skillet over medium-low heat, melt about
a tablespoon of coconut oil. Drop the pancake
batter by the ¼-cupful into the skillet once it’s hot.
(If using the chopped walnuts, sprinkle a few onto
each pancake now.) Cook until the pancakes get
bubbly on top, about 2 minutes. Flip and continue
to cook for another minute or so. Transfer to a
plate. Continue cooking the pancakes until all of
