The reason for this love affair is simple: Bone broth heals the body. In her book Nourishing Broth, Sally Fallon explains the history of broth dating back to the Stone Age, a time when bone broth was “stone soup” and people didn’t even own pots to cook in. Instead, they would use the abdominal pouches of butchered animals to simmer up this healing food. Today, broth has been brought into the mainstream, thanks partly to the Paleo community, alternative health care practitioners and followers of the GAPS diet. As integrative medicine practitioner Chris Kresser says, “Bone broth is one of the top 14 foods that supply vital nutrients to the body.” Dr. Cate Shanahan, the author of Deep Nutrition, sings the praises of bone broth for optimal health, and she even introduced it as a key item in the dietary program of the Los Angeles Lakers. Dr. Joseph Mercola calls bone broth “one of your most healing diet staples.” 10 January 2015 eNewsletter
