Method

Preheat oven to 200°c

Cut feijoas in half and scoop out flesh with a spoon and overfill a cup

Cut feijoa flesh into pieces so cup is packed. Melt butter in a bowl, add feijoas and stir. Add unbeaten eggs and combine. Fold in dry ingredients . Add liquid to achieve a soft consistency. Spoon into muffin pans. Mix cinnamon and sugar topping and sprinkle over muffins

Bake for 10 to 15 minutes.

Ingredients

75 g softened butter

1 cup chopped fresh feijoas

2 eggs

3/4 cup Chelsea White Sugar

2 tsp baking powder

2 cups flour

milk to mix

Topping:

1 tsp cinnamon

1 Tablespoon Chelsea White Sugar
