Choc-mint Bliss Balls

1 cup almonds

1 cup cashews

1 cup pumpkin seeds

1 cup dessicated coconut

2/3 cup cocoa/cacao powder

12 dried dates

1/4 cup water

20 drops (or more!) peppermint essence

Pinch salt

Soak the dates in water for about an hour.

Using a high speed blender, blitz the nuts, seeds, coconut, cocoa, dates, water, and salt. Blend to your desired consistency. Add half the peppermint. Blend. Taste. Add more if desired. (I like mine quite minty). Transfer the mixture into a bowl. Roll into bite sized balls, then roll in coconut to finish. You're done! Store in a container in the fridge, and try not to eat them all in one sitting ;)

(Just change the nuts and seeds as you see fit. There are many great combinations, but this is my favourite)

Peanut Butter Bliss Balls

14 dates (soak in water for about an hr)..

1/2 cup chopped peanuts

1/2 cup peanut butter

1/2 cup cocoa/cacao

1/2 cup shredded coconut

1/2 cup seeds (I used pumpkin & sunflower)

Some shredded coconut to roll the balls in

Place all ingredients in a food processor, and blitz until mixed to your desired consistency. Try rolling one bliss ball to see if it holds together. If it doesn't, add a teaspoon of water to bind it together more.
