CANDIED PECANS 3 cups pecan halves ½ cup sugar plus 1 tablespoon 2 teaspoons ground cinnamon 1 egg white 1 teaspoon vanilla extract BOURBON BALLS Makes 24 balls 2 tablespoons shredded sweet coconut 1 cup pecans 2 cups vanilla wafer crumbs (3-4 cups whole cookies) ½ cup powdered sugar 2 tablespoons unsweetened cocoa pow- der ½ cup bourbon 4 tablespoons unsalted butter Coating: ¼ cup powdered sugar ½ cup shredded coconut First, place pecans in food processor and pro- cess until they are crumbs. Pour into a large bowl. Next measure 3 cups of vanilla wafers and put those into the food processor. Pulse into fine crumbs. In total, you need 2 cups of vanilla wafer crumbs, which will be 3-4 cups of whole cookies. Once you have 2 cups of crumbs, pour that into the bowl. Add 2 tablespoons shredded coco- nut, cocoa powder, and ½ cup powdered sugar. Whisk together to thoroughly combine. On a plate, mix together remaining powdered sugar and coconut and set aside. Next, melt 4 tablespoons of butter in the microwave and then stir together with the bour- bon. Pour into the dry cookie mixture and stir until the mixture sticks together. Shape into 1-inch balls and roll in powdered sugar/coconut mixture. Cover and chill. These can be made sev- eral days in advance, so it’s one less thing to do on party day. — Juliana Goodwin PESTO CHRISTMAS TREE 1 (8-ounce) block of cream cheese Pesto sauce 1 pretzel rod Pieces of roasted red peppers or cherry tomatoes. Cut the block of cold cream cheese on a diago- nal so it makes two right-angle triangles. Then flip one of the triangles over to put the two together to make a tree shape. Generously cover the block of cream cheese with pesto sauce. Add a piece of a pretzel rod to make the base of the tree. Slice cherry tomatoes or pieces of roasted red peppers and use them to make ornaments on the tree. Serve with French bread or crackers. Preheat oven to 300 degrees. Mix together sugar and cinnamon and set aside. Whisk together egg white and vanilla extract. Place pecans in a large bowl and add the egg white mixture. Toss to thoroughly coat the pecans. Then add the cinnamon sugar and stir until all the nuts are coated. Spread pecans out on a baking sheet lined with parchment paper (very important). Bake for 15 minutes. Give the pecans a good stir and then bake 10-15 more minutes. Cool the pecans completely before packaging or they will become soft. Add 2 tablespoons and then add more if desired. How much pesto you need depends on the strength of your pesto. Slice green or black olives and cherry toma- toes. Some jarred varieties are thinly sliced and some are thick pieces, so if you bought thick bell peppers, then slice them into strips. String strips of roasted red bell peppers around the tree to create garland. Use the olives and tomatoes to create ornaments on the tree. Serve with crackers or pita bread. 1 whole wheat or plain baguette 1 pomegranate or ¾ cup seeds 8 ounces goat cheese 1/3 cup honey (or to taste) 20 fresh rosemary leaves Balsamic glaze for drizzling — Juliana Goodwin Note: If you cannot find balsamic glaze, which is a thicker, sweeter concentrated balsamic for drizzling, then you can make the orange cinna- mon balsamic recipe below.
