healthy living Roasted Brussels Sprouts Ingredients • Nonstick cooking spray • 4 pieces of prosciutto • 1 tbsp. olive oil • 1 pound brussels sprouts, halved and outer rough leaves removed • ½ sweet onion, chopped • ¼ tsp. salt (or to taste) • Freshly ground pepper (to taste) • Crushed red pepper flakes (to taste) Directions Spray large skillet with nonstick spray. Cook prosciutto on medium-high heat until crispy. Remove and place on a paper towel-lined plate, then crumble. Set aside. In the same pan add olive oil, heat until hot. Add onions and brussels sprouts and cook, stirring occasionally, until sprouts are golden brown, about 8-10 minutes. Season with salt and pepper to taste. Toss brussels sprouts with prosciutto and serve. Tip: Fresh lemon juice, lemon zest, and chopped pistachios are all nice touches to consider.
