healthy living Salmon with Fresh Spinach & Vodka Sauce Serves 2 | Serving Size: 1 filet + spinach Ingredients 2 - 5 oz. salmon filets ½ tsp. olive oil 20 grape tomatoes, cut in half 2 c fresh baby spinach, washed and trimmed 1 c *Cucina Antica La Vodka or Tomato Basil Cooking Sauce (or other high quality pasta sauce) Kosher salt to taste Fresh basil for garnish (optional) Parmesan cheese for garnish (optional) * Cucina Antica sauces are available at Whole Foods, Central Market, or online at amazon.com. Directions Preheat oven to 475°F. Place filets in medium oven safe skillet. Drizzle with olive oil and distribute the tomatoes around and on top of salmon. Sprinkle tomatoes with salt. Place skillet in oven and cook until salmon is done. The general rule of thumb is 10 minutes per inch of thickness. Meanwhile, place 1 cup of tomato sauce in a microwave safe bowl. Cover and warm for approximately one minute. To serve, place cooked salmon on plate. Crush fresh spinach in your hand and place on plate. Ladle warm sauce on top of salmon and spinach.
