healthy living Greek Shrimp with Tomatoes and Feta Serves 4 Ingredients 1 tbsp. olive oil 1 c celery, finely diced 1 small red onion, diced 1 clove garlic, finely minced 2 c fresh Roma tomatoes, diced 1 tsp fresh thyme (or ¼ tsp dried thyme) 2 tbsp. fresh basil (or 2 tsp dried basil) Freshly ground pepper to taste 1 lb. large raw shrimp, peeled and deveined ½ c crumbled feta cheese Directions Heat olive oil in large skillet over medium heat. Sauté the onion, garlic and celery until they are transparent (about 5 minutes). Add the tomatoes, thyme, basil, salt and pepper. Simmer uncovered until mixture thickens to a light sauce consistency. Add shrimp. Cover and simmer until the shrimp curl up and turn pink (about 3 - 5 minutes). Stir in feta cheese. Adjust seasonings. Serve warm, sprinkled with feta.
