1 - 14.5 oz. can crushed tomatoes
(Muir Glen fire roasted are excellent)
3
⁄4 cup feta cheese crumbles
½ cup pitted kalamata olives, roughly
chopped
½ red onion, minced
¼ cup olive oil
8 medium fresh basil leaves,
chiffonade*
Salt & pepper to taste

Directions
Mix all ingredients together in a
medium bowl and chill.
This dish is excellent served with whole
grain cubed bread or pita. Make in advance and keep chilled to enhance flavor.
Fabulous ladled over your favorite fish,
before or after cooking. Kick up the taste
of a bottled tomato sauce by adding
some of this leftover relish and warm
over medium heat. Ladle over whole
grain pasta.
