Newsletter September The ITE Year-2 students did their 2-weeks immersion program at Institut Paul Bocuse From September 10th to September 25th 2016, the ITE Year-2 students from the Culinary Arts and Restaurant Management Bachelor Diploma visited Institut Paul Bocuse at Ecully, France. During their twoweeks immersion program, Singaporean students underwent classes such as bakery with Chef Jean-Marc Berthomier, and participated to a Business Game specially designed for them. They also discovered and learnt more about famous French products by tasting a variety of cheeses coming from different regions of France. Mr. Didier Lassagne - MOF, Meilleur Ouvrier de France - went to Château du Vivier and explained them the cheese-making process and wine paring. A wine tasting also took place at Institut Paul Bocuse to complete the cheese workshop. The 18 students from the Culinary Arts and Restaurant Management Bachelor Diploma ended their two-weeks immersion program by visiting a famous vineyard and a chocolate factory. They also got the opportunity to present their internship projects to the Institut Paul Bocuse jury, and visited Lyon and its surroundings to better understand French culture and community during their free time. TED Entrepreneurship Project – Food Caravan @ Timbre+ From July to Septembre 2016, a group of 6 final year students undertook an Entrepreneurship project to set up a Food Caravan at a location called Timbre+ in Singapore. Their food concept is «Jusz Ballz », whereby their menu consists of food which are spherical in shape. These are finger food for a light lunch and as snacks with drinks. The students managed the business to ensure the profitability and success. Alliance members are in the midst of the Chef Paul Bocuse Week 2016 preparation ! The Chef Paul Bocuse Week is coming very soon! Following the previous framework, the Chef Paul Bocuse Week 2016 will honor Chef Paul Bocuse who turned 90 last February. Rich in terms of celebration and activities, the second edition will aim to valorize the Worldwide Alliance values and transmit its philosophy through a two-week event. When: From November 14th to November 26th 2016 Where: In each member universities campuses Who: Students, Alumni, chefs, instructors, faculty staff, professionals, food lovers, customers… What: PRODUCT Conferences Culinary demonstrations Wine workshops Wine tastings GUEST ENTREPRENEURSHIP Exchange of professors Conference about Paul Bocuse, his life, his work TEAM WORK Promotion of the cookbook Pastry contest Visio conference with the Laboratory of the Center of Research Picture contest Gala dinners Exhibitions Special courses Alumni meetings & testimonies In order to rise the Worldwide Alliance brand awareness and make this event a success, a minimum of 3 activities will took place in each member campus. Members will choose among the events suggested the ones they like the most. Nevertheless, the Paul Bocuse conference and the 2 contests will be mandatory.
