Adobo Recipe
INGREDIENTS
1 lbs onions, peeled and cut in 4
1 head garlic, peeled
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1 teaspoon whole black peppercorn
1 oz black recado
1/2 cups corn oil
1/2 cup sour orange
PREPARATION
Blend all ingredients together.
Season Lobster with salt and black pepper
Rub sauce on the lobster and cook on a hot grill with
oil.
Cook on each side for 3 minutes. Add a little butter
then place on corn sauce.
Corn Sauce
INGREDIENTS
1 whole kernel corn (can15.25oz), blended and
sieved
1/4 cup heavy cream
1 tablespoons butter

1 teaspoon sugar

1/2 teaspoon chicken base

1/2 teaspoon corn starch

½ teaspoon yellow food coloring
(optional)
PREPARATION
In a medium pan, with a thick bottom, add butter.
Once butter has melted, add corn and cook for 5
minutes.
Add sugar, heavy cream and base. Thicken if
necessary.
