Stewed Saltfish Cooked saltfish, diced tomatoes, green peppers,
parsley and garlic all sauteed in oil.
Spicy seasoned
Plantains Diced plantains, seasoned with ginger, hot pepper
sauce and diced onion. Fried until golden brown.
Seasoned Breadfruit
Coconut Dumplings
Lovers Beach
Diced breadfruit, seasoned with pepper, onion,
garlic, thyme, parsley, salt and black pepper.
Ingredients, except breadfruit, are cooked in oil for
5 minutes. A little chicken broth and the breadfruit
are added to the mixture. Ready to serve.
Grated coconut is added to flour, margarine, salt,
oil and mixed with water to form a dough. Dough
is shaped into small circles, and cooked in boiling
salted water for 15 minutes. That’s your dumplings.
