Ajoupa-Bouillon
An aromatic blend of
French and Indian spices meet,
in what is one of Martinique’s most
popular culinary ingredients, Colombo.
Toasted rice, coriander, ginger, cumin,
black pepper, and chilli, are ground
together resulting in a powder very
similar to curry. This special spice is used
to flavour a variety of Colombo dishes,
be it chicken, pork, fish or lamb.
Tropical flowers and rainforest mark the terrain in this little town at the base of Mount
Pelée. For those who perhaps would rather not scale the active volcano, less adventurous
pursuits are available. Activities at Ajoupa-Bouillon include hiking a trail through small
gorges which is a botanical delight or following a trail along the river to an alluring
waterfall.
