PREPARATION

Montserrat Goat Water

Ingredients

2 lbs goat meat , cut into bite-sized pieces 2 onions
3 cloves garlic , minced 2 tbsp Caribbean green seasoning
1 / 2 tsp ground cloves 1 tsp black pepper 1 small chili pepper
1 / 2 cup oil 3 tbsp tomato ketchup
4 cups water Browning 2 tbsp flour salt to taste

PREPARATION

Season meat overnight with all the seasonings , except chili pepper .
The next day , heat oil in pot . Add meat and cook for 3 minutes . Remove from heat .
Add ketchup and 1 tbsp browning . Stir . Return to heat .
Add 4 cups water and chili pepper . Cover pot and cook meat for 45 minutes , checking periodically for doneness .
Combine flour with some cold water to make a smooth paste . Stir into pot of meat . Stew will now be thick . Can add more paste if desired , to make it thicker .
Cover pot , reduce heat and simmer another 15 minutes . Serve hot . * Can add 1 / 4 cup of rum or whiskey to the stew , if desired .
