NK: What are the barriers and difficulties working in the world?
JG: Well
one good answer is the general lack of familiarity
with sake. At every level you go to, whether its consumers,
distributors and restaurateurs there is a lot of education still
needed. For instance consumers might know nothing about
sake, it should all be served hot; at the importer/distributor
level, you can’t really store sake like beer or wine. Everywhere
you go and who you talk to there is still a lot of education
that needs to take place.
In terms of writing, another challenge is you don’t want to
repeat yourself again and again, and you don’t want to be too
simple, nor too difficult. Finding the ‘hodohodo’, where you
find the right tone to appeal to the most people.
The third challenge is language, but you forget how difficult
it is to remember the terms and Japanese language. For
instance for the Sake Today magazine we write articles
that will not be over the heads of beginners but also then
interesting to someone who knows a lot about sake.
Thanks to the internet and a lot of educators, there is a lot
of basic knowledge about sake now out there now which
makes it easy to learn. It makes people who learned a little
bit and has now raised the appetite and interest level to
learn more detail.
NK: 世界で仕事をする上での障壁や困難のようなものはあります
か?
JG: 一般的に日本酒に馴染みがないことではないでしょうか。一般
消費者、ディストリビューター、レストラン経営者、どのレベルの
人々に会っても、まだまだ日本酒知識が足りていないと知らされま
す。一般消費者の視点で言うと、日本酒は熱燗で飲むものという以
外、他に何の情報も持っていないかもしれません。輸入業者・ディ
ストリビューターの視点では、日本酒がビールやワインのように保
管できないということを知らないことも多いです。どの国に行って
も、誰と話していても、教育の必要性を感じることが多いです。
執筆の際に感じる難しさは、何度も同じことを繰り返したくない、
簡素化し過ぎるのも、また難しくし過ぎることも避けたいというこ
と。「ほどほど」を見つけて、多くの人にアピールできる言い回し
になるように心がけています。
三つ目の障壁は言語です。欧米人にとって日本語の用語を憶えるこ
とがどれだけ大変か忘れてしまいますが、雑誌「Sake Today」で
は初心者にも、プロの人にも興味深い記事になるように努めていま
す。
インターネットの普及と教育者が増えたお陰で、日本酒の基礎知識
がもっと身近に学べる様になりました。 ここ最近は人々の興味が高
まり、更に詳しい情報を求めているように思います。
NK: 基礎理解が高まっている以外に、この十年で気付いた生徒の変
化はありましたか?
NK: Apart from the improvement in the basic understanding,
have you seen any other changes in the classroom over the
past ten years?
JG: はい、ワイン業界の人々が日本酒に興味を示してくれているよう
に感じます。上司に言われたからではなく、純粋に日本酒に興味を
もってくれています。素晴らしいのは、こういった方々は日々ワイ

telling them to. This is great because wine professionals are
on the floor, out there selling the wine. If these people who
know their wine are falling in love with sake and pushing
sake, we will do very well now.
もう一つは、少なくともアメリカではアルコール飲料のディストリ
してもらえたら、日本酒の販売拡大にも繋がるのではと思います。

beverage distributors are taking sake seriously. Ten years ago,
the main distributors didn’t have their own sake specialists.
Now almost all the big companies have a sake specialist.
They take the classification and products seriously, and it’s
becoming a bona fide proper business opportunity.
