How did you get into the sake world? Did you have a
moment when your eyes were opened to sake?

I don’t know if there was one moment. The whole
journey into sake has been very organic and smooth. The
first time I went to Japan I was so excited to go there. I
was very extreme about it. I would go with other friends
and I wouldn’t eat any Western food. It drove my friends
crazy…. I didn’t want a cocktail, beer or wine, I wanted the
Japanese drink. It was strange at first, and of course I had
tried warm sake before in Canada, where I kind of liked it,
