Salad in a Jar Party!

By Rebecca Gurski and Linda Tobiassen

Part of our mission through our Healthy Living Revolution is to educate and promote a culture of nutritious eating. One of our favorite ways to do this is by hosting Salad in a Jar Parties! All attendees bring a salad topping to share as well as 4-5 mason jars to fill and end up walking away with a week’s worth of prepared healthy meals-just dump and eat!

You don’t need us to host one of these parties-we encourage you to set them up on your own as a break from all that heavy holiday indulgence! Here is a how-to:

1. Create an event invitation (we like to use Facebook) and invite anyone who may be interested. The more people who attend, the more interesting your salads will be!

2. Make sure each person signs up for an ingredient they will bring. Variety is key! Recommended amount is 2-4 cups based on the item and number of attendees. Below is a list of examples:

Cucumbers, shredded carrots, chopped broccoli, zucchini, cherry tomatoes, chickpeas, walnuts, chopped bell peppers, grapes, blueberries, diced beets, dried cherries and cranberries, sliced radishes, hard-boiled eggs, quinoa, various seeds, shredded cheese or feta, peas.

3. Remind your guests to bring their mason jars. We have found that pint-sized works best but any will do. Also, its best to make sure the tops are labeled with names so they don’t get mixed up during the party.

4. Arrange the toppings and fill jars in this order: any dressings; hearty bits like beans, chickpeas, carrots, tomatoes, cucumbers, or beets; lighter bits like peas, peppers; and finally other toppings such as seeds, grains, cheese, and dried fruit. Generally the wetter, heavier items go in first so as not to mix with the others.

5. Take your jars home and dump on a bowl of your chosen greens when ready to eat! Toppings will last up to 5 days in the jars when refrigerated. Enjoy!
