A Recipe From Jane McFaddin
Yam Pie
• 2 medium yams
• ½ stick butter
• 2 cups sugar
• 3 eggs
• ½ cup milk
• 1 T allspice
Directions: Cook, drain and mash yams – add all
ingredients. Bake at 375° in unbaked 9” pie shell
until firm.
*Optional: Garnish with whipped cream if desired
Marshmallow Pumpkin Pie
• ½ pound (about 32) marshmallows
• 1 cup pumpkin
• ½ teaspoon cinnamon
• ¼ teaspoon salt
• ¼ teaspoon ginger
• 1 cup whipping cream
Directions:
Place pumpkin, spices and marshmallows in double boiler
Heat and stir until mixed well
Let cool, but not in the refrigerator
Stir in one third of whipped cream and blend in remaining cream.
Pour in 9” baked pie shell and refrigerate until set
