Singly, he serves as a Celebrity Chef Ambassador for iconic brands such as KitchenAid Commercial, Lodge Cast Iron, Naked Infusions, Microplane, and Chef Works.

MilliOnAir had the opportunity to catch up with the luxury Chef and Coffee expert to discuss how he developed his passion for culinary arts. In addition, we talked about his opportunities to cover the Oscars, The Grammy Awards, Emmy’s and more.

Can you tell us a little bit about your journey in business?

I started my first business when I was 8 years old and never looked back. I love starting a business from ground zero and turning it into an international brand. I have been a serial entrepreneur, experiencing many great successes and colossal failures along the way. I have lost everything several times over - cars, homes and money - only to regain them. After years of trial and error I entered the coffee industry. My reputation for having one of the greatest coffees in Seattle started when I partnered with the Seattle Seahawks and Sounders FC. During this same period I was invited by a group of pro athletes to a poker game. Their chef was unable to cook that evening. After informing them that I was a classically trained chef, they asked me to cook for them. We had been drinking a $500 a pound coffee, the remains of which I didn't want to toss, so I decided to use it to create a base for my saute. It was very well received. They said it was the single greatest steak they had ever had. I was dubbed the coffee chef from then on out. Since then I have been internationally acclaimed because of my luxury coffees and the fusion dishes I create with them. I have held the world title as Luxury Coffee Roaster of the Year world wide, since 2015.

You are known as a Luxury Coffee Specialist. In fact, the only one in the Western Hemisphere. Is there a particular blend of coffee that you enjoy the most?
Absolutely, of all of our coffees, single origins included, my most favorite is our Oscar, which I crafted for the 89th Academy Awards. Connoisseurs and Sommeliers alike have all described a crescendo effect on the finish. It goes down remarkably smooth and the overtones emerge filled with nuances of dark chocolate, caramel, essence of cinnamon and vibrant summer berry.

When you use your 100 point coffees as an ingredient, how does that affect the food you are preparing?
Coffee in general is a modifier. The chemical reaction created when coffee is introduced to food or drinks is sensational.

You have had the opportunity to cater to superstars, Elite Chefs, and for events like the Grammys, Oscars, Emmy’s and more. Out of all those events which one are you the proudest of? Unequivocally the Oscars. Every event that I cater for surrounding the Oscars is filled with acclaimed but down-to-earth celebrities, who I enjoy getting to know and feel truly inspired by. This high-level, internationally recognized award ceremony challenges me to import what is considered the epitome of quality food and spices and to create dishes that are artful and one of a kind.
