THANKSGIVING SALAD Ingredients: 1 pound of butternut squash peeled and diced into 1 inch cubes 4 tablespoons of dried cranberries 1 tablespoon of maple syrup 1 cup apple cider 1 teaspoon Dijon mustard 5 ounces of arugula, 5 ounces mixed greens (or lettuce of your choice) 1 ⁄2 cup walnuts 1 ⁄2 cup fresh pomegranate seeds 1 ⁄2 cup extra virgin olive oil salt and pepper 2 tablespoons apple cider vinegar 1 small (8 ounces) double cream brie cheese wheel (can substitute camembert) 1 ⁄3 cup fig jam 1 ⁄4 cup dried dates 1 ⁄4 cup dried figs 1 ⁄2 cup unsalted pistachios Directions: 1. In a Cuisinart mini chopper, chop dried dates, figs and pistachios. 2. Spread a thin layer of fig jam on top of cheese. Add the chopped dried fruit mixture on top of the fig jam. Press the mixture firmly on top of the fig jam. Cover with saran wrap and refrigerate. 3. Preheat oven to 400 degrees. 4. Place a piece of parchment paper on top of baking sheet. Add butternut squash on parchment paper. Drizzle 2 tablespoons of olive oil and maple syrup. Season with salt and pepper. 5. Roast for approximately 15-20 minutes turning once until squash is completely cooked through. Once cooked, remove from heat and let cool on baking sheet. 6. In a 3-quart stainless steel All-Clad sauce pan, add apple cider and cider vinegar. Boil over medium high heat until reduced down to 1⁄4 cup. 7. Take saucepan off of heat and add Dijon mustard, 1 ⁄2 cup olive oil, salt and pepper to taste. 8. Place arugula/mixed greens on a large platter. Add the roasted squash mixture, walnut and triangular slices of the cheese. 9. Top salad with dried cranberries and pomegranates. 10. Spoon warm dressing over entire salad, season with salt and pepper and serve immediately. 11. Enjoy!!!
