NVQ Certificate in Hospitality Services (Level 1) Length of Course 1 year Course Includes * Boiling, poaching, steaming, stewing, braising, roasting, grilling, deep and shallow frying and regeneration of prepared food and cold foods preparation and finish. * Food safety in catering, health and safety, introduction to healthier foods and special diets. * Food service, starting work in hospitality, introducing customer care and social responsibility at work. NVQ Diploma in Professional Cookery (Level 2) Length of Course 1 year Course Includes * Meat and poultry, preparing fish and shell fish, cooking and finishing sauces, pastries, vegetables and learning to prepare, cook and present an array of other foods. * Writing a well-balanced menu, diet and nutrition and costing food. * Skills in food service. * Working in our commercial restaurant which is open to the general public.
