Recipe: Spicy Luncheon Meat Fried Rice
EASY & DELICIOUS

If you have left over rice and Spam,
you're in for a treat! I learned to make this
dish in Singapore many years ago. Not only
it's inexpensive but packed with flavour! No
salt required as the meat itself is already
salty once rendered with the rice. It's a
great snack on a Sunday afternoon or
full on dinner with the family. You can use
any type of frozen vegetables but I used
a combination of peas, carrots and corn.
Really tasty! Try it and you'll like it.

4 cups leftover Rice
1/4 tsp Onion Powder
1/2 tsp Sugar
1/4 tsp Chili Flakes
4 cloves Garlic - minced
1 cup of Frozen Vegetables of your
choice
1 can Luncheon Meat - quartered
to bite size pieces
1 tsp Oyster Sauce
2 to 3 tbsp of Soy Sauce Pepper
to taste
Scrambled Eggs (optional)
Directions:
1. Pre-heat wok with oil on medium high
heat.
2. Add the luncheon meat and fry until
it looks crispy on the outside. Set it
aside.

fragrant. Add Chili flakes and cook for
another minute.
4. Add frozen vegetables and fry until it's
a bit scorched but not burnt. Add rice,
sugar, onion powder, oyster sauce, soy
sauce and mix well. Add in the meat
and season with pepper. Mix well to
incorporate the flavour of the meat in
the rice.
5. Top with scrambled fried egg pieces
and serve immediately.
