Delicious Dorset
Here are the finest dishes in the county this month. Chefs show off their latest
seasonal creations and the rest of us share the best local food we’ve enjoyed…

1. Brett Sutton at the The White Post in Rimpton wanted
to honour the last day of asparagus this season by creating
this spectacular dish, which uses other local ingredients ‘Red Barn Farm asparagus, pancetta, slow cooked
duck egg, black garlic ketchup.’ 1

2. Matt Budden, Highcliff Grill, Bournemouth shares his
honey roast Gressingham duck breast, caramelised
chicory, British quinoa with Dorset watercress,
radish and shallot salad. Matt said: “The dish is a
light main course from our summer a la carte menu using
British grown quinoa mixed with fresh Dorset watercress.
It’s one of our most popular dishes at the moment as it’s
a fresh summery dish using the best seasonal ingredients.
The secret to cooking the duck is to serve nice and pink
but to make sure the meat has been rested. Finish the pan
at the last minute with the honey to give it that rich
caramel colour.” 2
3. Bingley’s Bistro in the High Street, Poole, want to
shout about their nicely presented lemon posset topped
with Purbeck ice cream sorbet. 3
4. Oli Perron of Lunchd wants to show off his new
podded pea freekah salad from his lunch delivery
company in Poole. Looks vibrant and healthy enough to
allow serious over indulgence elsewhere.

The pan fried Singapore-style squid at the Crab
House Café, Weymouth, was nominated by Andy
Reed, who said it was simply ‘incredible, not too spicy
and very fresh.’
Mains
Lamb tikka balti with mushrooms at Cinnamon
Indian restaurant in Ferndown was nominated by Jen
Wilkins. She said the dish came on a sizzling skillet and it
was very tasty. She describes the dishes as traditional with
a modern twist. She also raves about the limoncello jelly
for dessert.
The Cornish moules marinière at Chaplins Cellar
Bar in Boscombe was nominated by Stephen Bailey. He
described the creamy white wine and garlic sauce as
‘fantastic’ and said the hand-cut chips were very tasty. 4
Thai green curry with prawns at The King and Thai,
Dorchester was nominated by Carmen Hudson. She
enthusiastically said she’d give the dish 10 out of 10
because it is so good. She adds: “I don’t often have the
same dish again because I like trying lots of different
food, but this is too good to resist. The owner is always
very helpful when ordering and makes fantastic
recommendations. As it’s all freshly cooked they’ll tweak
the spice levels depending on your tastebuds.”
