hen it comes to herbs, big is not better. The
latest trend among chefs is to use micro herbs
that can be grown hydroponically without pesticides,
giving them a more intense taste. Wimborne-based
HydroPhoria already supply restaurants across the UK
and are now making them available in Dorset, with
The Tickled Pig’s new deli in centre of town. You can
now buy your own micro herbs and even use them in
the deli to garnish. Flavour bombshells include the
Radish Rioja and lemon basil, great for panna cota.

Hogging the Lyme Light

ward-winning producers, Lyme Bay
Winery, have launched their English
wines with a showcase event at the iconic
Hix Oyster and Fish House in Lyme
Regis. They have one sparkling and four
still English wines, which chef Mark Hix
and his team paired with some fantastic
local food.
The simple fact is that English wine
can now rank with the best in the world
in blind tastings and Lyme Bay’s have
already won prestigious international
