The latest trend among chefs is to use micro herbs that can be grown hydroponically without pesticides, giving them a more intense taste. Wimborne-based HydroPhoria already supply restaurants across the UK and are now making them available in Dorset, with The Tickled Pig’s new deli in centre of town. You can now buy your own micro herbs and even use them in the deli to garnish.
