A steady stream of city folk heading down to Christchurch at the weekend means Head Chef Marc Carella has his work cut out to match expectations . He responds with finesse , turning out a choice of beef striploin and pork loin , along with vegetarian options . The beef is locally produced and spends its final days in a local small holding where it ’ s fed on grain to enhance the marbling and tenderness . It is then cooked low and slow overnight , rendering the fat and breaking down the fibres for that melt-in-the-mouth finish . The pork loin is brined in a secret recipe with a fabulous crackling on the side . Both are served with local greens , root vegetables , cauliflower cheese using local Old Winchester , and fluffy roast potatoes cooked in duck fat .
