Going Swimmingly
T
he founders of The Stable pizza, pie and cider
restaurant are opening a new beach café bar in Lyme
Regis. Nikki and Richard Cooper brought The Bay
restaurant on Lyme seafront and are transforming it into
SWiM, a new cafe bar with “a focus on craft drinks and an
impeccable menu at affordable prices”.
The new owners plan to remove the existing ceiling and
install new floor-to-ceiling windows to make the most of
the iconic views over the world famous coastline. SWiM
will be open all year round for breakfast, lunch, dinner and
cocktails. Importantly, it’s hoping to appeal as much to
locals as to summertime visitors.
Nikki Cooper, founder and Uplyme resident, said:
“We fell in love with Lyme Regis when we moved to
Dorset 15 years ago, we were lucky enough to build our
family home here last year and now we can’t wait to get
the refurbishment underway.” Richard Cooper, husband
and business partner adds: “We’ve never spent as long as we
have on any business we’ve owned, agonising over every
detail, every item on the menu, every supplier we work with
and every fixture we put into this building. The process,
while long-winded at times, has been the most enjoyable
chapter in my career to date.”
They certainly have a strong track record having owned
The Bull Hotel in Bridport and set up The Stable, a chain
that grew rapidly across the UK and was sold to Fullers.
They plan to open SWiM at Easter.
