The savoury and sweet tarts go like crazy. Anything
mushroom
and garlic, to the bakewell tarts and the frangipane. I like to play around and produce
different combinations. I do a truffled cauliflower cheese tart, and a sausage roll with black
pudding. Just recently I had some cavolo nero so I put that with some Blue Vinny and walnut
into a pastry. It’s about experimenting.
