Dessert PARFAI T S 2 servings k 1 cup full-fat plain Greek Yogurt (use reduced fat if full-fat not available) k Local honey (raw if available) k 2 cups fresh berries of choice k 1/2 cup chopped walnuts k 1/2 cup shredded, unsweetened coconut k 2 mint sprigs Sweeten yogurt to taste with honey. Combine walnuts and coconut and set aside. For each parfait, place a heaping tablespoon of nut mixture in the bottom of the dish. Follow with two tablespoons of yogurt mixture, then 1/2 cup berries. Repeat layers. Use any remaining yogurt or nuts and mint sprigs to garnish. 103
