HOMEMEADE BREAD Toast it, top it, stuff it, dunk it, mop up with it, wrap things in it. So versatile and so varied in form, from sourdough, to flat bread, to beautiful artisan loaves and a myriad of others in between. It can be the basis of a healthy, energising snack or part of a complete meal on the go, to empower and nourish your body. Here's a very reliable and easy recipe, shared with me a year or so ago by Sally Smith, who lives up the beautiful Awatere Valley. No easy pop to the shop for her if she runs out. This can be made in the breadmaker or mixed and kneaded by hand. It's a big loaf though, so I use the breadmaker to mix and rise the dough, then transfer to a bread tin, leave for 20 minutes or so in a warm place to rise again, and then bake in the oven. INGREDIENTS: METHOD: 350ml warm water Place all ingredients into breadmaker. 3tsp brown sugar Set breadmaker to dough cycle. 1 tbsp milk powder On completion, tip onto floured bench (it's quite a wet, sticky dough at this stage). Shape into a smooth oval loaf and transfer to a bread tin (like a loaf tin only larger). 250g wholegrain breadmix (Edmonds) 250g white flour (my tweak is to use half spelt and half ryemeal flour here) 3 tsp Surebake yeast Place in a warm spot covered with a clean tea towel to rise again, then place into an oven preheated to 190°. It takes about 20 minutes to bake to a beautiful brown crusty loaf, with a lovely texture that stays fresh for 2-3 days (if it lasts that long!).
